Title:   Vegetable Burgers
Category:   Main Dishes - Clean (Only natural/organic ingredients), Vegetarian
From:   Classic 1000 Vegetarian Recipes
1 c rolled oats
3/4 c wholemeal flour
2 celery sticks- finely chopped
3 carrots- grated
1/2 c cheddar cheese- grated [or non-dairy for Vegan]
1/2 onion- finely chopped
1 T tomato puree or paste
1 T low-sodium soy sauce
1 t dried mixed herbs
Sea salt and freshly ground black pepper
1 egg replacer/substitute
Exotic oil
Directions:   Mix together all the ingredients except the oil and form into four burgers- not too thick. Saute in hot oil for 5 minutes, turning once. Drain on kitchen paper and serve on buns with ketchup, mustard and lettuce.

Optional: Nutty Vegetable Burgers- prepare as directed above, but substitute 1/2 c chopped mixed nuts for half the oats.

Optional: Vegetable Hot Dogs- prepare as directed above, but shape into sausages before cooking. Serve in hot dog buns with sauteed onions, mustard and ketchup.
