3 1/2 c whole wheat flour
1 T active dry yeast
1 c warm water
2 t honey
2 T molasses
1 T sea salt
3/4 to 1 c warm water
1 T caraway seeds
|Directions:||1. Place the flour in a large bowl and put the bowl in the oven at the lowest possible setting for at least 15 minutes. This is to warm the flour and the bowl.
2. Sprinkle the yeast over the warm water. Add the honey and molasses. Stir to dissolve the yeast and the sweeteners. Add the yeast mixture to the warm flour. Then add salt. Stir in enough warm water to make a sticky dough.
3. Oil a large loaf pan and put the dough in it. Sprinkle with the caraway seeds. Let it rise for 45 minutes to 1 hour- until the dough just reaches the rim of the pan.
4. Preheat oven to 400F. Bake for 30 to 40 minutes or until nicely browned. When done, the loaf should have a hollow sound when rapped on the bottom with your knuckles. Cool bread in pan for 10 minutes before removing it to cool on a rack.
