Title:   Carrot-Raisin Salad

Ingredients:  
1/2 c dates- chopped
1/4 c walnuts
1 lb. carrots- grated
1/2 c raisins
3 to 4 apples- diced fine
2 celery stalks- diced
1/2 t dill weed
1/2 t lemon juice
Cottage cheese or plain Greek yogurt- optional
Directions:   Combine all ingredients in a large bowl. When serving, a scoop of cottage cheese or plain yogurt may be used as a topping, if desired.
Makes:   4 servings
