1 red bell pepper- sliced into thin strips
1 green or yellow bell pepper- sliced into thin strips
1 vidalia or maui onion- sliced thinly
1 c dry quinoa or brown rice- cooked
2 c water
1/2 small red onion- diced
1 can (15 oz.) organic black beans
1/2 c fire roasted crushed tomatoes
3 t ground cumin
1 T chili powder
1 t sea salt
Freshly ground black pepper to taste
2 T extra virgin olive oil
1 pckg. sprouted or whole wheat tortillas
Toppings- avocado, non-dairy cheese, salsa
Makes:   6 to 8 burritos
