Title:   Pasta Bean Soup *****

From:   Vegetarian Pasta
2 T olive oil
3 cloves garlic- crushed
4 T fresh parsley- chopped
2 c dried whole wheat gnocchi piccoli (shells)
6 1/2 c vegetable broth
3 T vegetable puree or tomato paste
14 oz. can mixed beans- drained
Sea salt and freshly ground black pepper
Freshly grated parmesan cheese- to serve
Directions:   Heat the olive oil in a large saucepan, and saute the garlic with the chopped parsley for about 2 minutes. Add the gnocchi piccoli and cook for 1 to 2 minutes, stirring constantly. Pour in the vegetable broth and add the vegetable puree or tomato paste. Bring to a boil, reduce the heat, then simmer for about 10 minutes, stirring occasionally until, until the pasta is tender.

Add the beans and season with salt and pepper. Continue to cook for a further 5 minutes, then serve with a little freshly grated parmesan cheese.

Optional: if you can't find a can of mixed beans make your own- black beans, white/canellini, black eyed peas, green beans, etc.
