Title:   Super Easy Mango Salsa

1 firm mango- chopped fine
1 quart of a purple onion- chopped fine
1/2 red pepper- seeded, deveined and chopped fine
1/2 c fresh cilantro- chopped fine
1 clove garlic- passed through garlic press
1 t sea salt
Freshly ground black pepper
1 T fresh lime juice
Directions:   Toss all ingredients together. Rather than dicing up the mango, onion, red pepper and cilantro by hand, try using a food processor and pulsing until the ingredients resemble salsa consistency. Keep refrigerated until ready to use.
Makes:   7 servings
