Title:   Brown Rice Pilaf

1/4 c chopped mushrooms
1/4 c chopped celery
1/4 c chopped green onions
1/4 c chopped red pepper
1 c dry brown rice
2 1/2 c water
Directions:   Preheat oven to 350F. Coat a large 3-quart casserole dish with cooking spray. Briefly saute vegetables in small fry pan until translucent or soft but not mushy. Place all ingredients in casserole dish and cover. Put in the over and bake for 45 minutes or until all liquid is absorbed.
