Title:   Garlicky Couscous
Category:   Side Dishes - Clean (Only natural/organic ingredients), Vegetarian
From:   Eat Clean Diet
1 1/4 c water
1 T extra virgin olive oil
1/2 t sea salt
2 large cloves garlic- peeled and crushed
1 c whole wheat couscous grains
1 small red pepper roasted or one 6 oz. jar roasted peppers- drained and diced
2 T fresh basil- chopped
Fresh ground black pepper
Directions:   In a medium saucepan combine 1 1/4 c water, oil, salt and garlic. Bring to a boil. Stir in couscous. Remove from heat. Cover and let stand for 5 minutes. Fluff with a fork. Remove garlic cloves and stir in red pepper and fresh basil. Season with pepper and serve.
