1 1/4 c whole wheat pastry flour
1/4 c whole wheat flour
1/8 c wheat germ
1 t baking powder
1/2 t sea salt
1 t cinnamon
1/4 t allspice
1/4 t cloves
1/4 t nutmeg
1/4 t ginger
1 c varied baking nuts- shelled, unchopped
1/2 + 1/8 c dates- chopped in half
1 lb. dried fruits [golden raisins, craisins, cherries, blueberries, peaches, apricots, prunes]
2 eggs [or 2 egg whites & 1 egg]
1/2 + 3/8 c organic sugar
1/2 c unsweetened fruit juice
1/8 c molasses
3/8 c unsweetened applesauce
Directions:   Dredge fruit and nuts in dry ingredients. Mix remaining ingredients in a small bowl. Add to flour/fruit mixture. Stir until well combined. the batter will appear to be overwhelmed with fruit. Prepare a 9x5-inch loaf pan: line with waxed paper or oil well. Fill pan 2/3 to 3/4 full with batter. Bake at 275F for 2 1/2 to 3 hours until a knife inserted into the middle comes out clean.
Makes:   1 loaf
