8 oz. whole wheat pasta
2 T olive oil
1 medium onion- chopped
1 medium green pepper- chopped
2 cloves garlic- minced
2 T chili powder
1/2 t ground cumin
1 t sea salt
2-3 tomatoes- diced
1 lb. kidney beans- cooked
1 corn cob yield [cob cooked & kernels cut off]
1/2 c water
1/2 c organic jalapeno cheese- shredded

Directions: | Cook pasta according to directions. Meanwhile, heat oil in large skillet over medium-high heat. Add onion, green pepper, garlic, chili powder, cumin and salt. Cook, stirring occasionally, 4 minutes or until vegetables are tender. Add tomatoes, kidney beans, corn and water. Bring to a boil. Reduce heat and simmer, stirring occasionally, for 15 minutes. Toss with hot pasta and sprinkle with cheese. |
