Title:   MacGregor Krub or Klubbe (Potato Dumplings)

4 c shredded raw potatoes
2 c flour
1 T salt
Cooked ham, bacon or salt pork
2 to 3 quarts beef, ham or chicken broth
Directions:   Place potatoes in strainer. Rinse with cold water; drain well. In a large bowl, combine flour and salt. Add potatoes; stir until coated. In medium saucepan, bring broth to boil over medium heat. Using a spoon, scoop a rounded spoonful of mixture (about potato sized). Press cube of pork meat into center, covering completely. Carefully lower into hot broth. Maintain simmer for about 45 minutes, turning after 25. Lift dumplings from broth. Eat with ketchup or syrup if desired.
