1 1/2 c rolled oats- thick, old-fashioned
1/2 c oat flour*
1/4 c cashews
1/2 c almonds
Pinch cinnamon
Pinch salt
2 T organic 100% apple juice concentrate
1 T organic 100% pineapple or orange juice concentrate
1/4 c light coconut milk
1 T honey
1 T vanilla extract
3/4 t cashew butter**
1 T pure maple syrup
1/4 c dried cranberries
3/4 c dried cherries
2 T honey- heated
Directions:   Preheat oven to 275F. Lightly coat a sheet pan with canola oil. Combine oats, oat flour, nuts, cinnamon and salt in a medium bowl and mix well. Combine apple juice, pineapple juice, coconut milk, honey, vanilla extract, cashew butter and maple syrup in a small bowl and mix well. Add to dry mixture and mix until ingredients are moist. Crumble mixture onto sheet pan and bake for 45 minutes to 1 hour, stirring after 25 minutes to allow for even cooking. Remove granola from oven, break apart while still slightly warm and add dried fruit and honey. Cool on sheet pan.

*You can make oat flour in the food processor from regular or quick rolled oats.
**You can substitute almond butter or peanut butter for the cashew butter.
