Title:   Tortilla Roll-ups with Honey-Vegetable Vinaigrette

12 6-inch flour tortillas
1 T olive oil
1 T vinegar
1 T honey
1 t course-grain brown mustard
1 1/2 c Chinese cabbage- chopped
1/2 c shredded carrot
Boston lettuce leaves
Directions:   Warm the tortillas by placing in tin foil in a 350F over for about 10 minutes or until heated through. Meanwhile, stir together salad oil, vinegar, honey and brown mustard in a medium mixing bowl. Add chopped Chinese cabbage and shredded carrot; toss gently to coat.

Place the lettuce leaves atop each warm tortilla. Spoon about 2 tablespoons cabbage mixture atop each tortilla.

Roll up jelly-roll style; slice the roll into 1-inch-thick pinwheels.
Makes:   about 7 rolls
