Title:   Baked Potato Crisps

2 baking potates- 1/2 to 3/4 lb. each- unpeeled and well scrubbed
1 T olive oil or olive oil cooking spray
Sea salt
Freshly ground pepper
1 t chopped fresh chives- optional
1 t chopped fresh parsley- optional
Directions:   Preheat oven to 400F. Oil 2 nonstick baking sheets with olive oil. Cut the potatoes into slices 1/8" thick. Place the potatoes in a bowl and toss with the olive oil to coat evenly, or coat with the spray. Season to taste with salt and pepper. Place on prepared baking sheets. Bake until crisp and browned, 20 to 25 minutes. Transfer to a serving dish and toss with the chives and parsley if desired. Taste and adjust the seasoning. Serve immediately.
