Title:   Caribbean Black Bean Quesadillas *****

Ingredients:  
2 t olive oil
1 medium onion- chopped
1 t minced garlic
1 t pumpkin pie spice
1/2 lb black beans- cooked
1/2 c low salt vegetable broth
1 large sweet potato- cooked, peeled and diced (or 1 can sweet potatoes- drained and diced)
1 small can green chiles or 1 T finely minced jalapeno pepper
1 1/2 c grated part skim mozzarella or monterey jack cheese
10-inch whole wheat flour tortillas
yogurt cheese and salsa
Directions:   In hot oil, add onion, garlic and spice. Cook about 6 minutes or until onion is soft. Stir in beans and broth. Bring to boil, reduce heat, and simmer 5 minutes or until liquid is mostly absorbed. Slightly mash beans with a fork and stir in sweet potato chunks. Next, place one tortilla on plate, then cover surface with 1/2 c bean mixture. Sprinkle with 1/4 c cheese and chiles if desired. Top with 2nd tortilla. Slide onto hot griddle or frying pan that has been lightly oiled [or nonstick pan]. Cook for 3-4 minutes, or until tortilla is golden brown. Carefully flip quesadilla and cook the other side. Use pizza wheel to cut into wedges and serve with salsa, yogurt cheese and finely shredded lettuce. Garnish with cilantro leaves or lime slices.
Makes:   4 quesadillas
