Title:   Corn Tortillas

Ingredients:  
2 c mas harina
1 1/3 c cold water
1 t salt
Directions:   1) Combine mas harina, salt and water and mix thoroughly. Cover and let "rest" for 20 minutes. Preheat ungreased griddle or pan over medium heat until a drop of water will "dance" on the surface.

2) Shape a bit of dough into a 1 1/2" ball. Keep remaining dough covered to prevent it from drying out. Place ball between two pieces of waxed paper and place in center of tortilla press. Flatten ball slightly with fingers. Close press and push handle down until ball is completely flattened. Open and remove the tortilla.

3) Peel off wax paper and cook tortillas one at a time for 2 minutes on each side, or until they turn a delicate brown. Keep them warm in the oven or fry them in a little bit of shortening to make tostadas or enchiladas. Tortillas may be frozen and reheated later.
