|Title:||Cauliflower with Cheese Sauce|

1 1/2 c milk [nut, soy, rice or lowfat cow]
3 T whole wheat pastry flour
1/2 t sea salt
1/2 t thyme
1/4 t cayenne pepper
1 c finely diced red bell pepper
1/3 c low fat shredded sharp cheddar cheese
3 T grated parmesan cheese
2 scallions- minced
1 t clean dijon mustard
1 head cauliflower- cut into small florets
|Directions:||1) In medium saucepan, whisk milk into flour until no lumps remain. Stir in salt, thyme, and cayenne and cook, stirring constantly, over medium heat for 5 minutes or until sauce is lightly thickened.
2) Stir in cheddar and parmesan and cook 1 minute until cheese has melted. Remove from heat and stir in scallions and mustard.
3) Meanwhile, in large pot of boiling water, cook cauliflower 4 minutes until tender. Drain well and transfer to medium bowl. Add cheese sauce, tossing until cauliflower is well coated.
