Title:   Miner Vegetable & Meat Casserole

1 large grated potato
1 lb. ground beef
2 eggs
1/3 c canned milk
2 grated carrots
3 T chopped onion
Salt and pepper
1 can cream of mushroom soup
1 c evaporated milk
1 can cream of celery soup
1 c water
1 1/2 c sifted flour
1/2 t chili powder
1/3 c shortening
1/3 c evaporated milk
3 t baking powder
1/4 t salt
1 unbeaten egg
1 c shredded cheese
1 T dried parsley
Directions:   Meatballs: Mix first 7 ingredients together and shape into meatballs the size of large walnuts. Fry in hot oil until brown. Cover and cook 10 minutes. Put into a 9x13-inch pan.
Sauce: Combine soups, 1 c evaporated milk, and water and pour over meatballs.
Biscuits: Mix remaining ingredients [flour to egg]. Knead on floured surface 10 times. Roll out to a 12-inch square, sprinkle with cheese and parsley. Roll as a cinnamon roll and cut into 12 biscuits. Place biscuits on meatballs and sauce and bake at 400F for 25 minutes.
