2 c milk [nut, soy, rice or lowfat cow]
6 T unsweetened cocoa powder
1/3 c agave nectar
3 T cornstarch
1 t vanilla extract
|Directions:||Stovetop: In a medium saucepan, combine 1 3/4 c milk, cocoa, and agave and bring to a boil, whisking. Meanwhile, in small bowl, combine remaining 1/4 c milk and cornstarch. Add cornstarch mixture to the simmering milk mixture and simmer, whisking, for 2 minutes or until thickened. Remove from the heat and stir in vanilla.
Microwave: Pour the milk into a 4-cup microwave-safe measure or bowl. In a small bowl, stir together cocoa, agave and cornstarch until combined; stir the sugar mixture into the milk. Stir in the 1 t vanilla. Microwave on High for 3 minutes, then stir. Continue to cook on High for 2 to 8 minutes longer, stirring every minute to keep it smooth, until the pudding is thickened.
Pour the pudding into 4 dessert bowls and let cool before serving.
